Thursday, already? This vacation is going way too fast.
I’ve been pretty lazy. I spent Monday in bed –because it seemed like an awesome thing to do. I watched The Help under the covers, surrounded by kitties. I paused the movie to enjoy some leftover Indian food from the night before,
which I ate in bed (don’t judge). Later, Dave made popcorn which I smothered in a melted blend of Earth Balance, nutritional yeast powder and Sriracha and enjoyed it, wait for it, in bed! I finally left the bedroom at 6:00 p.m. only to return at 8:30 p.m. An. Awesome. Day.
Tuesday morning I blogged–in bed. (Please be sure to check out “How do you do it?” (A vegan and an ominvore in the same house) — the conversation in the comment section is inspiring and informative!)
I finally removed myself from the pile of blankets and cats so that Dave and I could meet two friends at Candle 79 for lunch (food porn here— the BBQ Seitan Sandwich was off the hook). I love, love, love introducing non-vegans to fabulous vegan food and, let me tell you, Candle 79 is the place to do it. I saw Dianne, who served us up fabulous drinks, and Benay, who was as warm, kind and hospitable as ever. It was a lovely lunch. Later that day, when we got home, I learned that this blog was highlighted on This Dish is Veg as one of The top 10 best vegan recipe websites! A true, true honor!
Wednesday morning I spent a few hours (yes, I said hours) updating my Pinterest with almost every single one of my recipes on a new board. Am I in vacation mode, or what? But, you know how the interwebs suck you in and suddenly it’s next week? Yeah, that happened to me. At 10:00 a.m. I realized I hadn’t eaten breakfast, I hadn’t showered and I had an 11:00 a.m. dental appointment. Eep! I whipped up a super quick, super savory breakfast.
Vegan Chorizo & Spinach Scramble
Ingredients (Serves 1)
- Avocado oil
- Garlic
- Smart Sausages® Chorizo Style (or vegan chorizo/soyrizo of your choice)
- Spinach
- Hot sauce
- Almonds, slivered
Instructions
Heat oil in a skillet on medium-high.
Add garlic (I used two cloves) and saute quickly (30 seconds).
Add vegan chorizo, diced, and saute for a minute or so.
Add two or three handfuls of baby spinach and hot sauce (I used Cholula). Stir, cover and reduce heat to simmer for just a few minutes (until the spinach begins to wilt).
Stir in almond slivers and serve.
Breakfast was ready in less than five minutes!
Mmm Mmm. Crazy to use so much garlic before a dentist appointment? Well, that’s how much I trust my Tom’s toothpaste!
I made breakfast, I ate breakfast, I showered and I was in the dentist’s chair at 11:01. Rock star! Dave and I then spent a quiet afternoon inside while the wind was howling outside. We finally watched the movie Rise of the Planet Apes. Wow, have you seen it? It’s a prequel to the original television series and absolutely a story of animal rights. I was such a mess during the first half to two-thirds of the film. Literally weeping. Then, BAM, the tide changed and I was on the edge of my seat with excitement.
Today I’m heading back into Manhattan for the day because I’m going to have lunch with one of my most favorite people in the whole wide world, the one and only Gena!

Yum! Vegan chorizo is my absolute favorite faux meat! I will definitely have to try this.
Rise of the Planet of the Apes was an amazing film. I saw it in the theater! Glad you liked it as much as I did.

I finally got to have dinner at candle 79 on Wed night with my omni husband and 2 omni friends. It was the highlight of our trip to NY! The food was outstanding, my husband and friends raved about it. I can’t have oil or high amounts of fat, so the chef constucted a meal just for me with and appetizer and entree that were out of this world. Will definitely be back!
