For Avocado Apple Toast
- 1 avocado
- 1 apple
- Chopped pecans
- Ground cinnamon
- Pinch of salt
- Lemon juice
For the tofu scramble
- Olive oil
- Carrots, celery, onion, mushroom
- Crumbled extra-firm tofu
- Turmeric
- Black salt
- Tomato powder
- Smoked paprika
- Chipotle powder
- No-salt spice blend
- Kale
- Pepper
- Nutritional Yeast
Savory Oats
From Fast & Easy Vegan
1 teaspoon vegan butter
½ cup diced sweet or yellow onion
¼ cup diced carrot
¼ cup diced celery
¾ cup rolled oats
2 cups vegetable broth
½ cup water
½ teaspoon salt
¼ cup nutritional yeast
¼ teaspoon black pepper
2 to 4 cups baby spinach, arugula, or other quick-cooking leafy green (optional)
- In a pressure cooker, combine the vegan butter, onion, carrot, and celery. Select Sauté for an electric pot, or sauté over medium-high heat until the onion softens, about 3 minutes. Add water or vegetable broth if it begins to stick. Stir in the rolled oats, broth, water, and salt.
- Lock the lid. Select high pressure and set for 6 minutes if using an electric pressure cooker. If using a stovetop pressure cooker, increase the heat to bring to high pressure, then maintain high pressure for 5 minutes. Use a natural release.
- Stir in the nutritional yeast, pepper, and greens (if using) and serve.
