Hello from Florida! The weather is perfect and I’m enjoying some much-needed family time!
On the first night we went out for Mexican food. I had a guacamole and vegetable burrito, hold the cheese. Plus these beauties.
The next morning my sisters, niece, and folks had omelets for breakfast. I had to put on my thinking cap. I grabbed two cans of beans from the pantry (kidney and green beans), drained and rinsed them and tossed them in a bowl. I poured a bit of olive oil and vinegar over the beans, added a couple of dashes of cinnamon, a pinch of sea salt and fresh ground pepper and tossed. I added fresh, diced pineapple, tossed again, and served over a bed of lettuce. YUM.
We drove to Tarpon Springs to check-out the Sponge Docks and, based on a recommendation from a friend on Facebook, we had lunch at Hella’s.

I grew up right by Tarpon Springs – the sponge docks are so much fun! Never been to Hellas, but it looks like they’re just as good as Costas, my favorite.

Place looks great! My tummy is so much more sensitive these days, but remembering the days I could down a few more drinks & eat more “comfort” vegan food out without stomachaches 🙁
