Almost four years ago Dave and I packed up our home in New York to start a new stage of our life in Colorado. We were ready to professionalize our passions – Dave as a triathlon and swim coach and me as a “professional vegan” – in a city we could afford as entrepreneurs and that promised a sunny, outdoorsy lifestyle we value. Four years later our professional dreams have come true and we love Colorado Springs – and our weekends in New Mexico – more than ever.
On my radio show today you’ll meet a friend and colleague Sara Laycock, who is also a transplant to Colorado. Once going vegan, she, too, wanted to find a way to use her skills and experiences to further the vegan cause. And she’s doing just that, now serving as the Campaigns Manager for Mercy for Animals.

Four years ago, while driving across country with our belongings and cats, I was working on Vegan for Her – my first book – and I was in awe that this dream was coming true. And I certainly didn’t expect that I would then write a second book (Vegan Pressure Cooking) and now a third one, The Vegan Air Fryer, coming out next year with Vegan Heritage Press.
Or that I would produce and host a weekly, syndicated vegan radio show. Or write a monthly vegan dining review for the Colorado Springs Gazette. Or become a chef instructor at a university teaching a vegan cooking class to culinary students. Or work with vegan food brands. Or coach others in their health and wellness practices.
Last week I was in New York teaching at Victoria Moran’s Main Street Vegan Academy, of which I am a proud graduate. I travel back to NYC four to five times a year to teach the When Your Vegan Lifestyle Coach & Educator Certification Means Business: Incorporating Your Credential into a New or Existing Career class to the Academy students. I started my presentation with this quote:

I believe this.
In my mind’s eye, I could actually see my future, evolved career – I envisioned spending my professional time and energy on helping others discover the importance of veganism and ultimately thrive as a vegan – and that vision pushed me forward.
I’ve been writing here for over six years and many of you were with me from the beginning. Your cheerleading and support have helped this career trajectory and life path and I am forever grateful. I hope you’ll always let me know how I can support you in return.
