Hi folks! I’m back with more Sunshine Burger fun! Today I share two new recipes – Vegan Tzatziki and Seriously Spicy BBQ Sauce – that I created specifically for the Falafel and Shitaki Mushroom burgers and another giveaway (details below)!
Last month I created this Grilled Summer Salad with Creamy Apricot Dressing
starring the Original Sunshine Burger. Your response was overwhelming!
Since then, I’ve been busy with my friends at Sunshine Burger. I served as a spokesperson for VegFest Colorado again this year and that meant doing at television cooking demo for KUSA’s Colorado & Company where I whipped up the Grilled Summer Salad with Creamy Apricot Dressing.
The next weekend I got to hang out with Cole Jones, the General Manager of Sunshine Burgers,
where we spent Saturday talking to many of you! It was fun to tell people that they can find Sunshine Burgers at Sprouts, Natural Grocer’s, Whole Foods, Mountain Mama Natural Foods and, wait for it, Walmart (mostly in Colorado and neighboring states to the north)! Vegan burgers for everyone = YES!
Cole knew that I was planning a Very Vegan BBQ for the Colorado Springs Vegan & Vegetarian Group…

…and graciously donated vegan burgers for all attendees!
They were a huge hit! As were the sauces I created to go with the burgers!
I made a Vegan Tzatziki (a traditional greek sauce typically using cucumbers, dill and yogurt) for the Falafel Burger
and a Seriously Spicy BBQ Sauce for the Shitake Mushroom Burger.

Okay, back to those recipes (and a giveaway, soon, I promise!)
Vegan Tzatziki
Ingredients (Makes 4 cups)
- 2 packages firm tofu, drained
- Juice of 2 large lemons
- 1 tablespoon vinegar
- 2 tablespoons water
- 1/4 teaspoon sea salt
- 1 tablespoon fresh dill
- 2 cups diced cucumber, halved
- More dill, for garnish
Instructions
Add tofu, lemon juice, vinegar water, salt, dill and 1 cup of diced cucumber to a blender.
Blend for 20 – 30 seconds, long enough to blend everything and maintain a thick, yogurt-like consistency. Add more water, if needed.
Pour into a large bowl.
Finely dice the remaining cup of diced cucumber.
Add cucumber to the bowl and mix well.
Pour tzatziki into an airtight container and refrigerate, ideally one day before using. If you make this on the same day you plan to use it, place it in the freezer for about an hour.
Serve with a sprinkling of fresh dill.
And now, for that BBQ sauce.
Seriously Spicy BBQ Sauce
Ingredients (Makes about 3 cups)
- 2 teaspoons cayenne pepper
- 2 teaspoons yellow mustard seeds
- 2 teaspoons ground black pepper
- 1 teaspoon salt (use more or less, to taste)
- 1 can tomato paste
- 4 teaspoons apple cider vinegar
- 4 teaspoons vegan Worcestershire sauce
- 1 to 1 1/4 cup water
- 1/4 cup maple syrup
- 2 tablespoons minced onion
Instructions
Add all ingredients to a pressure cooker.
Cover, bring to pressure and cook at pressure for 4 minutes.
Allow for a natural release.
Remove cover and stir. If too thick add water. If too thin, add tomato powder to thicken and simmer to reach desired consistency.
If making stovetop
Combine all ingredients, bring to a boil, reduce heat, cover and simmer on low for 20 – 25 minutes

At a vegan BBQ I’d serve veggie burgers, vegan cole slaw, grilled veggies and probably some grilled pineapple and avocado. I’d most likely invite my family, friends and members of my roller derby team!
BBQ jack fruit sandwiches, broccoli slaw, sweet potato salad with raw mayo, bbq baked beans, roasted vegetables with shiitake mushroom burger, grilled corn, sparkling ginger lemonade and peach sangria. We had this all plus more for the 4th at my parents house. Thanks For great giveaway
The vegan BBQ would have vegan burgers, veggie kabobs, roasted corn, coleslaw, potato salad, fruit salad, gazpacho, Mojitos, and vegan s’mores. I would invite the people who invite me to their BBQs with the instruction, “Eat beforehand. We have nothing for you.”
I like the tradition corn on the cob, vegan baked beans, kale chips of course! I would invite my sister and probably use her grill too!
I would have a variety of veggie burgers, some grilled globe squash slices and portobello mushrooms, creamy vegan potato salad, and probably also some grilled peaches for dessert! I would invite as many omnivores as I could to show them how amazing vegan food is!
I must try the tzatziki sauce! first time I’ve come across a vegan version. The bbq sauce sounds tasty too
I would make BBQ hearts of palm sandwiches, Cole slaw, and grilled veggies, and I would invite my friends and family who can’t believe that you can have a complete, delicious meal without animal products!
At my vegan barbeque I would serve kabobs with veggies, tempeh and tofu. Plus baked beans, potato salad, fruit salad and cole slaw. I’d invite my neighbors.
This is AWESOME!!!! I wanna have a Sunshine BBQ! I’d serve ’em like you did with different sauces and maybe some homemade buns. And definitely lots of side salads and fixins. Coleslaw for the win.
I’d make grilled veggies and burgers with pineapple for my family!

In addition to the Sunshine Burgers I’d serve a variety of toppings & sauces, pretzel buns and multigrain buns, grilled veggies & corn on the cob, vegan german potato salad, a vinaigrette-type slaw, tabbouleh, vegan settler’s beans, iced tea, ginger-ade, with cold watermelon and vegan ice cream for dessert. I’d invite all my near neighbors. Well, now I’m hungry!
I would serve grilled stuffed mushrooms and I would invite my friends and family.

Two of my friends are vegan while I’m vegetarian. I think this would be so great for a gathering with our whole crew!

Vegan burgers, grilled yellow squash and zucchini, fresh fruit…my family and friends would be there.
I would invite some friends. Some are vegans but all of us are being more mindful of what we eat. These look awesome. I would also have lots of fresh fruit and veggies along with healthy condiments to pile on the burgers.

I would invite my whole family and we’d have vegan burgers and grilled veggies.
I love BBQing great vegan food for my non-vegan friends since it’s a great way to let them know what amazing foods vegans can eat. I like to serve a variety of different vegan burgers, brats, Italian sausages, etc plus grilled corn on the cob, as well as grilled veggies like onions and peppers. I also like to make a my special vegan chorizo stuffed peppers!
