Thursday night I got home from work and was plain ‘ole tired and lazy. I grabbed soy curls out of the freezer, and spinach, mushrooms and marinara sauce out of the refrigerator. Dinner!
Soy Curls in Spinach, Mushroom and Tomato Sauce
Intuitive cooking! Use whatever amount of each ingredient that feels right for YOU!
Ingredients
- Olive oil
- Garlic, minced
- Onion, diced
- Soy curls, rehydrated
- Chik-Style Seasoning
- Mushrooms (I used baby bellas, sliced)
- Marinara sauce
- Baby spinach
- Vegan Parmesan cheese
- Ground black pepper
Instructions
- Heat olive oil in skillet.
- On medium-high heat saute onion and garlic for a minute or so.
- Add soy curls and Chik-Style seasoning and saute for about three minutes.
- Add mushrooms and continue sauteing for a few more minutes.
- Add marinara sauce and spinach, stir and cover.
- Reduce heat and simmer for 5 minutes.
- Serve with vegan Parmesan cheese and ground black pepper.
This meal was conceived and prepared in under 20 minutes. My kind of meal! (My omnivore husband had it for dinner, too!)

I’m going to save this recipe for the day when Soy Curls become available in Ontario, Canada. I have requested that one of the local Seventh Day Adventist stores carry it but so far………..no luck.

I’ve never tried soy curls before but will be sure to soon.Is the texture similar to Seitan? Have you ever seen them at Whole Foods? If not, I’ll be shopping at Vegan Essentials for them! Thanks.
Have you eaten TVP? It’s much more like that — but the pieces are bigger (not like TVP crumbles). I have not seen them at stores I frequent. Butler Foods has a store locator on their site.

I have never tried them before, but of course, as everyone out here keeps talking about them, my interest is peaked! I was just turned on to the most amazing seitan made by a small company named Upton’s Originals. IT comes in a variety of flavors and it rocks. I ordered it from Vegan Essentials because my Whole Foods won’t be carrying it until the end of this month or next.
I love Uptons! They were at Vida Vegan Con and I was able to sample some of their yumminess then. I haven’t seen it locally…yet!
