Have you made an “everything but the kitchen sink” dish? You know, you just grab anything you see to make a soup or skillet meal? When Dave and I returned home from a weekend away last Sunday we were super-hungry and, well, we hadn’t hit up the grocery story.
I started grabbing things and came up with a simple chili. If you don’t have a pressure cooker just do this in a soup pot for 20 – 30 minutes.
Soy Curl Chili
Ingredients (Serves 4)
- 1 teaspoon vegetable oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 4 carrots, chopped
- 3 celery stalks, chopped
- 1 can diced tomatoes
- 1 can butter beans (or any canned bean), rinsed and drained
- 1 can artichoke hearts, drained and chopped
- 1/2 bag Butler Foods Soy Curls
- 1 cup corn (fresh, frozen or even freeze-dried)
- 1 teaspoon ground cumin
- 2 teaspoons chili powder
- 1 teaspoon cinnamon
- 2 cups chicken-style vegan broth
- 1 cup water
- 1/2 teaspoon fresh ground black pepper
- Salt (optional), to taste
Instructions
Saute garlic and onion in vegetable oil on medium-high heat in an uncovered pressure cooker.
Add all other ingredients – except salt – and cover. Bring to pressure. Cook at high pressure for five minutes.
Use a quick release.
Add salt to taste.
YIELD: 4 servings
This chili is excellent as a leftovers. I served it for lunch the following day over Sesame-Curried Brown Rice (a touch of toasted sesame oil, 1 cup of short grain brown rice, 1 and 1/4 cup vegetable broth, 1/2 teaspoon curry + 18 minutes in the pressure cooker).
If you have soy curls on hand, give it a try!

Sounds great! I want to try it. How much is 1/2 bag of soy curls? We are very lucky here to be able to get them in bulk.

This was really good! I made it for a potluck and everyone liked it. I used cauliflower instead of artichoke hearts, since I didn’t have any, and 1/2 the chili powder since I prefer mild food.
