Saturday morning I got in from a run and wanted a quick breakfast before heading to the farmer’s market. I was also making a grocery list and going through the refrigerator and cupboards to see what I did, and did not, have on hand. Oops, silken tofu, I forgot I had it. Seemed like a good time to try it in a smoothie.
JL’s Silky Strawberry Smoothie (PRINTABLE RECIPE)
Serves 2
- 1/2 cup silken tofu
- 1 cup fresh strawberries
- Half a banana
- 1 cup ice
- 1 t Ojio agave syrup
Blend.
So flavorful! These days I’m pretty much using filtered water with hemp seeds or a little protein powder in my smoothies so this was such a nice alternative. The tofu not only provided the protein but it added a thickness that was delightful.

That sounds really yummy, JL. My favorite smoothie these days is peach/mango. Unfortunately, I don’t measure. I just throw frozen mango and peach chunks in the blender (maybe about a cup and a half), pour in vanilla almond milk to almost cover the frozen chunks, squirt in some agave syrup, sprinkle with flaxseed and blend until smoothe. To make it a little thicker, I sometimes use “Silk” vanilla soy creamer. Throwing it in the freezer for a few hours makes it a soft serve ice cream. 🙂

Yum, this sounds great. I’ve never tried tofu in a smoothie, but I have blended it into savory creamy sauces.

I have not yet tried silken tofu in my smoothies but I’m gonna try it. I happen to have a box in my fridge and I forget why I bought it (I recipe that I obviously didn’t make.) Great idea!

I have never used tofu in a smoothie, but it has been on my list to try for a while now. I once made a pudding using pumpkin, silken tofu, and a few spices. It was a nice, vitamin-rich dessert treat!
Oh my! I love anything pumpkin flavored, so that’s definitely something I’ve got to try!

I actually hav e a little silken tofu in my fridge that I had forgotten about. I should absolutely try your recipe and see how I like it.
I think it’s the perfect way to use up silken tofu, deliciously!
