Ah, back to regular life.
I sure had fun reading all of those vegan cookbooks, cooking recipes and then writing about them. But it’s kind of nice to get back to what I know. Plain old eating.
I thawed out some of my leftover Candle 79 seitan the other day and last night I made tacos.
I froze half of the seitan as cutlets and half crumbled. I sautéed the thawed crumbled seitan in vegetable broth, taco seasoning and red onion and served it on a tortilla with guacamole, Daiya Pepperjack, salsa and lettuce.
A fabulous, quick meal after a long day of work!

I love seitan tacos, and they’re actually on our menu for next week. I wish I lived near a restaurant like Candle 79, but for now I’ll have to keep making my own seitan, I guess 🙂

Your tacos look delicious! It’s so handy to have seitan in the freezer, especially several varieties with different flavors and textures. Since I have gotten comfortable making it from scratch, I hardly ever purchase Field Roast. (Love the taste, not the price.)
I feel like everyone’s been talking about guac/avocados recently. I need some! Looks delicious, solid use of leftovers.
