Last night Vida Vegan Con kicked off in Portland with a cupcake and champagne party hosted by VegNews. It was then that I realized there is so much I want to do and not enough time to blog out a great daily summary. I’ll write up some good reports next week (if I ever get back to New York — my flight has already been canceled due to Hurricane Irene).
Today I’m just going to give you a glimpse into lunch Thursday at Hungry Tiger Too.
I had the wonderful pleasure of meeting Fran Costigan, Julia of Snarky Vegan and Kristen of Skull-Sugar Thursday morning. We had a big, incredible lunch that included chicken-fried tofu over waffles, corn dogs and tater tots and mac & cheese. All vegan, natch. Walk, don’t run, to Hungry Tiger Too!
I’m off for a run this morning with my roomie Megan and our new friend Amber (and maybe Christy!) along the waterfront. We have a big, full day of conference sessions and tonight, the Galarama.
Back tomorrow with a quick glimpse into what’s happening at this fantastic conference!
