I am celebrating another food day here on the blog because I am swamped with last-minute World Vegan Day event details (Colorado Springs, today is your last chance for $5 tickets! Get ’em here kcmjworldveganday2015 now, or you’ll pay $7 at the door). Big thanks to both the Gazette (Enjoy a taste of the vegan lifestyle at local celebration) and the Independent (Go Smug or Go Home) for covering the event!
It’s National Oatmeal Day!
If you love using a pressure cooker (or Fagor multicooker or Instant Pot), it’s an ideal method for making a hearty oat dish quick.
Here’s my standard formula:
- 1 cup steel-cut oats
- 3 cups liquid
- Cook at high pressure for 3 minutes; use a natural release
Sometimes I use a plant-based milk (almond, soy or flaxseed), instead of water, for a creamier texture and richer flavor. When I’m craving a savory breakfast, I opt for vegetable broth, add some fresh or frozen veggies, and serve with salty nuts or seeds and diced avocado.
Here are a few tasty recipes right here for you.
Happy National Oatmeal Day!
