Back in my dieting days I used to avoid potatoes. If the food was white, it had to be bad, right? Wrong!
Potatoes are often considered a comfort food (think mashed or fried) and, prepared well, they can be just that and still be a great addition to a healthy, plant-based diet!
In our book Vegan for Her, Ginny Messina’s Plant Plate recommendations include consuming at least four servings of whole grains and starchy vegetables a day. A source of B6, potassium, copper, vitamin C, manganese, phosphorus, niacin, and dietary fiber, a 1/2 cup serving of white or sweet potatoes is going to fill you up! Here are a few of my favorite potato recipes (including french fries and a variety of mashes!)

Glad to see this potato myth exposed-just had potatoes for supper last nite in a delicious potato, chick pea and corn chowder that my husband whipped up.

It was, it really, really was. We often eat soup-meal in a bowl!

The recipes look great and I know you’re working on a pressure cooking cook book. Does that mean that the majority of your recipes will be for pressure cookin? I’m capable of figuring out how to convert them to alternate cooking methods. I’d just like to think that this isn’t your only focus now.
Pressure cooking is my only focus *right now* because my book is due in a month! 😉 But, no, I cook all kinds of ways and will continue to share those methods here.
