Meatless Monday Meal Plan (7/29/13)
Breakfast: Silky Strawberry Smoothie
Lunch: Summer Lentil & Millet Chili
Dinner: Asian Fried Chick’n Salad
Snack ideas:
- Make a simple fresh fruit salad: dice up a piece of fruit and toss with chopped walnuts
- Spread nut butter on a few whole grain crackers (or on celery sticks)
- Dip raw veggies into hummus

Oooh, that fried chicken salad looks amazing!!! I love combing plant meats and a super-healthy salads. It appeases my intense Libra desire for balance.

I can’t wait to try the Summer lentil millet chili. We eat at a local Vegan café that serves a soup something like that. I bought some millet hoping to find a soup or chili recipe to make and now I have! Thank you so much for sharing this recipe.
