Breakfast: Miso Soup
Popular in a macrobiotic diet, a hot bowl of miso soup, packed with vegetables and beans or tofu, is a great way to start your day!
- Easy Black Bean Miso Soup
- Super-Quick Miso Soup
- Eye of the Goat Bean Miso Soup
- Creamy Kale Miso Soup
- Chik’n Noodle Miso
Lunch: Hummus Wrap or Sandwich
I love spreading hummus on a whole grain wrap and loading it with raw veggies. It’s super-portable (slice it in half and store in a plastic container or wrap it up in foil) which is perfect for taking to lunch or school.
Dinner: Seitan!
What can I say? I love me some wheat-meat. It’s a nice “meat replacement” when cooking for non-veg family members and it’s so versatile!

JL! You are full of amazing, yummy, ideas!! I love both miso and hummus, so I always love having more recipes and ideas for them. I do also love Seitan….whenever it’s been prepared foooor me….but, I have yet to use it in a recipe, successfully, myself. I want to use it to make those made-rights (that’s what they’re called, yes??) that you posted before, because they looked awwwwwwesome, and I will, but I haven’t gotten to it just yet. 🙂
