It’s Meatless Monday! While focusing on the “fab five” – vegetables, fruit, legumes, grains, and nuts and seeds – today’s plan also focuses on reality. Sometimes you just need something quick and easy because life can get busy!
August 19 Meatless Monday Ideas
Breakfast: “Ice Cream” for Breakfast stars cashews, banana and mango and rolled oats (three of the fab five!). If you want a nut-free, veggie version, try my Green Ice Cream version, with or without the oats.
Lunch: Easy Black Bean Soup features black beans, miso broth and stewed tomatoes. Add a leafy green like kale, collard greens or spinach to pack a little extra veggie punch or enjoy this soup with a salad and use a rice vinegar, which will go so nicely with a miso soup.
Dinner: Tofu Tacos can be quick to make, just adjust the marinade timing or whip up that marinade this morning and let it seep into your tofu all day (oh, my preferred way to bake tofu is with a cast iron skillet). You’ve got your legumes and a veggie. I like to serve this with a simple sample: arugula with jalapeno, tomatoes and I drizzle a little lemon juice over it.

- These are quick and easy meals so think about how many more servings you would like of vegetables, fruit, legumes, grains and nuts and seeds and plan your snacks and/or dessert accordingly.

- If you’re running around all day, a few pieces of fruit and snack bag filled with raw veggies is perfect to tote around – as are Mary’s Gone Crackers, one of my favorite on-the-go snacks.
