Last night the Colorado Springs Vegan & Vegetarian Group hosted a dinner event for 16 at the newly remodeled McCabe’s Tavern.
The interior is new and so is the menu.
With clearly marked plant-based options.
I’ve gotta tell you, seeing the word VEGAN clearly noted on a mainstream menu gives me goosebumps.
I talked to Greg Howard (owner) and Matt Cook (manager) about the menu change in this Periscope video:
And then we ordered food. Lots of vegan food. Like these fried avocado tacos (with cashew aioli) to start,
followed by the special of the night – BBQ chipotle tofu – and a new menu staple: cauliflower steak with brown rice and carrot puree.

It was a delicious night.
Colorado Springs veg-heads, get yourself to McCabe’s Tavern for good food (and to patron a restaurant that makes vegans and vegetarians a priority in their menu planning!).
Oh, as I was leaving I ran into Cody and Tyler, two of the four owners of The Burrowing Owl (a vegan dive bar opening soon in Colorado Springs) and they gifted me this koozie.
Perhaps I am.
And I’m loving vegan Colorado Springs!

Wow, I rarely eat out but the next time I do I’m going to McCabes Tavern! That periscope is really neat JL!
