I know, I know, vacation is over. But I was going through some photos and just had to share some terrific savory breakfast dishes that we enjoyed last week. If you watched my vacation vlog you know that I definitely did some advance work for our five-day vacation. Here’s how I put those preparatory efforts to use.
Monday morning we got outside early for a bike ride. By the time we returned to the apartment we were famished. I made a simple miso soup using the onion, kale (from the garden), daikon radish, dried shitake mushrooms & wakame (soaking in the picture below) and miso that I brought from home.
I reheated the lentils and brown rice-farro mix (both prepared at home the day we left for vacation) in a small saucepan by adding a bit of oil to the bottom of the pan and drizzling water over the lentils and grains to make it more porridge-like. I covered and heated on low.
I diced up pickles, added a few walnut pieces to the plates (for added fat) and poured some Kombucha for a post-breakfast drink.
A macro breakfast made in heaven!
A couple of day later I made another breakfast with the grains (this time with my Intuitive Three-Bean Delight) and I made a warm vegetable salad.
I boiled about 1 cup of salted water and then added onion, cooked for 2 minutes and removed. Added carrots, cooked for 2 minutes and removed. Finally I added zucchini and cooked for 2 minutes and removed.. While the veggies were parboiling I made a dressing for the salad: miso, olive oil, Sriracha and warm water (from the veggie boil). I poured the dressing over the warm vegetables, added fresh dill and tossed.
This has become one of my favorite ways to enjoy vegetables in the morning!
It’s hot this week and I am more devoted to a hearty, warm breakfast than ever. As the heat rises during the day my appetite decreases and I crave raw. So I love eating up veggies and grains in the morning, after a workout, and eating higher raw throughout the day.

That sounds like an excellent way to start any day. I prefer savory over sweet in the morning; my favorite savory breakfast year-round is miso soup, although I’m starting to enjoy tofu scrambles again.
Isn’t how crazy how wonderful miso soup is for breakfast? I really enjoy it! And yes, I do love a tofu scramble — definitely don’t make enough of those…maybe this morning!

Sounds like a fabulous savory breakfast. I haven’t had too many vegan savory breakfasts yet, my favorite is a simple tofu scramble.
