Well, pressure cooking is pretty great.

This is the time of year when you’re thinking about gift-giving … and gift-receiving. I think the gift of pressure cooking is a beautiful thing.

As most of you know, I wrote the book Vegan Pressure Cooking: Beans, Grains, and One-Pot Meals in Minutes, which came out in January of this year. The zeal and love of pressure cooking is growing among home cooks. Especially plant-based / vegan home cooks. Why? Folks, we eat a lot of beans and grains and cooking them fast is the bomb. Brown rice in 22 minutes. Soaked pinto beans in six minutes. Need I say more?

Well, I’m going to.

I learned how to pressure cook using stovetop models. Presto and Fagor were my first. The Fagor models were so reliable that I became incredibly loyal. I used the Splendid, Duo and Chef lines with zeal. Then, as my book launch date was approaching, I reached out to Fagor to see if they would like to partner on my book tour. Boy, did they! Because of Fagor, I was able to do over 40 vegan pressure cooking demonstrations across the U.S. (and one in Canada!) reaching over 1,2o0 people. Wow wee! I was able to give away lots of Fagor pressure cookers along the way, too.

On the book tour I learned quickly that many people fear stovetop pressure cookers. I’d like to think I helped move many of them beyond the fear during my classes. I also saw that people were really drawn to multi-cookers. You know, the electric devices that can do multiple things: pressure cook, slow cook, cook rice, and even make yogurt. Set it and forget it devices are really appealing. I get it. As I used the Fagor LUX multi-cooker on my book tour, I fell in love with the easy-to-use devices, too.

These days I’m loyal to both.

On any given Saturday or Sunday, I’ll have one or two pressure cookers going on my stove top: a vegetable broth in one and some variety of legume in another. I’ll have my Fagor LUX multi-cooker busy, too, usually filled with brown rice, farro, or other grain. Bulk cooking on the weekend (also known as batch cooking) is how I maintain a healthy plant-based diet (and I merge these whole foods with the best vegan convenience options, which is the basis of my real world vegan meal plans). Cook on the weekend and reheat and eat all week long. Here are a few of favorite recipes using a pressure cooker:

  1. I would love to use this for cooking beans. We always make large pots each week to throw in different dishes, so a pressure-cooker would drastically reduce the time needed.

  31. I would love to have a second multi-cooker so that I can batch cook more efficiently on my days off. I end up making grains on the stovetop because my multi-cooker is busy making beans or soup, etc. I prefer the flavor and texture of pressure cooked grains so the second cooker would be a great addition to my vegan kitchen!! Plus I just think it would be super cool and fun to have 2 cookers going at once…multi-tasking multi-cookers!! 🙂
