Friday, Friday! Are you clicking your heels? I was down and out earlier in the week with a cold and I’m still trying to dig myself out. That’s the interesting thing about running your own business – no paid sick days! But, I was feeling poorly and I needed to rest. I’m glad I did.
I did manage to make some comforting food to get me through. Like this warm bean and potato salad (recipe coming soon!)
I also made tempeh in the pressure cooker for the first time, following a recipe from Jill Nussinow, The Veggie Queen.
So good!
I also had potatoes with ketchup for lunch one day…
…because it was 2:30, I was starving and it sounded awesome. So there.
And now it’s Friday and I have a very busy day ahead of me. Tomorrow I will be doing a cooking demonstration at the John Jay Homestead Farm Market (read all about this weekend’s events in the market’s latest newsletter). I’m really excited to show everyone there how easy it is to make my Creamy Kale Miso Soup! I updated the recipe (now serves 6!) and shared details on the market in my I Eat Plants column yesterday – get the details here.
One other thing I did this week – I signed up for Vegan MoFo. I must be a crazy mofo because I have new clients, I’m working on the book, and I have something else big happening (to be revealed soon). I have NO business doing Vegan MoFo! Except that I already know I would blog at least 20 times in October so what’s the big deal? Well, a theme is a big deal – . people like Vegan MoFo themes. I put on my thinking cap the other night and suddenly realized it’s not that complicated. I recently asked you to respond to a survey on What YOU Want to Know About Going Vegan. I received great questions from you and have decided that my MoFo theme is “Go Vegan with JL…In the Kitchen!” I’ll provide 20 posts in October addressing your questions by providing food prep tips and tricks. Haven’t filled out the survey yet? Do it now – anyone who submits by 9/30/12 is entered to with a Go Vegan with JL apron! I hope the theme will be fun and informative for you.
