Lucky me, I’ve been enjoying Denver vegan eats lately!
Last weekend I was in the mile high city to rep Phoney Baloney’s Coconut Bacon at Whole Foods. I also found some time to hang out with my husband and friends.
Saturday night I went to Root Down for the first time. Now I’ve enjoyed some delicious eats at the Denver International Airport Root Down (here and here) but I was super-excited for the dining experience at the original. And it did not disappoint.
We started with cocktails – I had a Moscow Mule with ginger beer.
Oh yum! And love that it’s served in a cool copper mug!
I had the soup of the day, a cucumber, tomato, piquillo pepper gazpacho with pickled rhubarb
and the risotto with peas and shaved asparagus.
Such a great atmosphere and vibe PLUS great food. I love Root Down!
Tuesday I was back in Denver for a lunch meeting. We met at Watercourse Foods, where I’ve dined before but now they are 100% vegan. YAY! We decided to order several items and share: street tacos with black beans and sweet potato. Buffalo style cauliflower and an Asian inspired salad with edamame.
Oh. There was dessert.
And Wednesday I found myself back in Denver, via Colorado Springs airport, en route to the midwest for my niece’s wedding (I’m officiating!). I had dinner at Crú Food and Wine Bar at Denver International Airport. The wine list at Crú is divine, as was this Margherita pizza, hold the cheese and add caramelized onion.
It was a very delicious few days eating vegan in Denver!
