Cucumber and Onion Quinoa Salad and a Small Bites Throwdown Cooking Demo Saturday in Katonah, NY

I am having some serious fun writing the I Eat Plants column for LoHud.com!  I enjoy writing about great vegan food and finds in Westchester County and sharing recipes each Thursday but this week takes the (vegan) cake.  The Journal News / LoHud.com is sponsoring a Small Bites columnist “throwdown” at a local farm market.

The food editor, Liz Johnson, invited my fellow columnist Maria Reina and me to participate in a friendly recipe competition. I was pretty nervous because Maria is a trained chef and, well, I’m not!  But you know me, always up for spreading the vegan food love.

Liz asked us to select produce from a local farm market and use the same ingredient in our recipes; we selected cippolini and bunching onions from Amawalk Farm.  We created our recipes, make a video about the process and invited our readers to join in on the fun …. more on how YOU can get involved in just a moment!

Cucumber and Onion Quinoa Salad

Ingredients (Serves 6)

For the salad

  • 1 1/2 cups quinoa (dry)
  • 2 1/4 cups water
  • 1/2 teaspoon salt
  • 2 cups diced cucumber
  • 1 1/2 to 2 cups grilled bunching and cippolini onions
  • 1 tablespoon fresh dill, chopped

  1. Yum, this recipe looks gorgeous and lovely and simple too. I’ve been eyeing up a griddle pan for a long time now. I’m really going to have to get myself one. I voted for this recipe!

    1. Thanks for the vote! I LOVE my grill pan -such a great way to get those grill marks on my tofu – but on the stove! 😉

  2. O M G I wish I had seen this earlier. I’m craving something fresher tasting and ended up making stuffed acorn squash with quinoa, tempeh, onions and carrots. I didn’t pick up my farmbox last week and I have very little fresh food left but I do have a cucumber and dill! I’m definitely making this for lunch tomorrow! Voted for your and I’ll make sure to spread the word.
