Happy Friday! I have a really busy day ahead of me! I am working with two coaching clients (Yay!), I have several consulting client conference calls, a nonprofit board meeting, and then dinner tonight with some of my favorite vegan Tweeters – most of whom I’ve never met!
This new life of “retirement” is bringing me great joy…and jam-packed days! But somehow we manage to pull together some interesting meals around here, which I’ll share through a few Instagram photos (I’m jlgoesvegan if you use it) I snapped each day.
Monday night Dave, my darling husband who happens to be an omnivore, made this dinner. Border Blend pasta from Flour City Pasta with farmers market chard sautéed in olive oil, garlic, onion and red pepper. We wanted to love the pasta but the varied types in the blend don’t cook at the same time so some pieces were al dente and others over-cooked. Still, a good meal!
I had a 5pm haircut appointment Tuesday night and, lucky for me, there is a Whole Foods across the street from the salon. The salad bar was calling for me: lettuce, grilled fruit, shredded veggies, and edamame and chickpea salads.
While at Whole Foods Tuesday I picked up a few things that helped me pull together a quick and tasty dinner Wednesday evening. I tried the Field Roast Lentil Sage deli slices for the first time. Delicious! Served with a side of kimchee that I picked up in the refrigerated section near the vegan mayos.
Last night I almost made another sandwich for dinner but thought “No JL, you can do better!” And I did. I tossed broccoli in my handy-dandy steamer and made a tahini dressing in the blender (water, tahini, brown rice vinegar, salt, pepper, onion and garlic). I drizzled the dressing over the broccoli and enjoyed it with a side of simple, diced cucumber and tomatoes (from the farmers market) and ground black pepper. This dinner came together in 10 minutes flat!

Finally, I want to thank you for the incredible response to my request for recipe testers for the book I’m working on with Ginny Messina. I received 45 applications! My heart is full with all of the kind comments and enthusiasm you have shown for this project!

Your omni man does a good amount of vegan cooking!! (I’d say he’s on his way… shhh, don’t tell him that) 😉
