I am one lucky vegan! The fine folks of Beyond Meat sent me samples of their new, beyond fabulous product to try and to then share my thoughts with you.
I received the grilled, lightly seasoned, and southwest style chicken-free strips.
Today I’ll share what I did with the southwest style. Okay, I’ll share what Dave, my omnivore husband, did because he made this vegan Cinco de Mayo dinner.
He grilled the sweet peppers and onion slices for about 10 minutes and the Beyond Meat chicken-free strips, on a grill basket, for about 15 minutes.

Dave sliced up the onion and peppers and assembled burritos with salsa verde, guacamole and vegan sour cream.
I’ve had Beyond Meat before. A few years ago, when it was under another name, I sampled it at a Woodstock Farm Animal Sanctuary ThanksLiving dinner. Just this winter I had the Whole Foods deli vegan chick’n salad with Beyond Meat. This product blows me away. The texture is eerily chicken-like and it just plain tastes great.
My omnivore husband’s response to the burrito:
F*cking hell, Beyond Meat is vegan activism!

OMG! We are Beyond Meat twins!! They sent me the same samples, and last night (for my belated Cinco de Mayo dinner), I used the Southwest Style to make fajitas. And I just had the leftovers for lunch! And now I’m gonna blog about it this week. Great minds, that’s us. 😉
