It’s Sunday and it’s not vegan news you can use. I’ve decided to put my weekly news posts on hiatus for the fall. I have a really good reason. Several, actually.
This fall I will be spending half of my time in New Mexico to teach a vegan cooking class in the culinary program at the Univeristy of New Mexico-Taos! I’m over the moon for so many reasons. Namely, it’s the first time they have offered a class of this nature in the program so, yay vegan! Second, I adore teaching. To have 16 weeks with students who want to learn the ins and outs of plant-based cooking is such a gift. Third, Taos! In the fall! Heaven! (Note to those of you in the Taos area: This class is open to both enrolled UNM students and the general public! You can still register for the course – get details here.) I can’t wait to get to know the fine folks in the Taos vegan Meetup (and, of course, I’ll keep things going strong with the Colorado Springs Vegan & Vegetarian Group).
There are two more good reasons for me to have some “respite” time this fall in Taos, away from the hustle and bustle of my work and volunteer life in Colorado Springs: I’m working on two new books! I’m delighted to announce that I’m writing a cookbook devoted to vegan air frying (due out May 2017). And I’m doubly delighted to announce that I’m collaborating with my friend, colleague and mentor Victoria Moran on a new cookbook and lifestyle guide (due out January 2018).
Both manuscripts are due before the end of the year!
Between the culinary course, the two books, my weekly radio program, and my consulting and coaching work, well, let’s just say that I have an action-packed few months ahead of me.
My plan for the blog is to simply pop in to share recipes, vegan finds, or anything else when it feels right. (I’ll also continue sending out a monthly newsletter: you can subscribe here.)

Here’s what feels right today: sharing some of the vegan food we enjoyed in Taos this weekend (and some of the amazing views from the drive).
Upon arrival in Taos, we love to stop by Eskes Brew Pub. They have a Beast Burger on the menu, as well as this Tofurky brat, smothered in housemade sauerkraut.
We get our groceries at Cid’s Food Market, where you can pick up a bag (or two or three) of boiled bagels made by local vegan-friendly Middle Eastern eatery El Gamal. Perfect with Kite Hill chive cream cheese.
On our way out of town, we often hit up The Burger Stand at Taos Ale House for the lentil burger (hold the feta).
On the drive between Taos and Colorado Springs, I’m on the watch for wild horses. Which are often very easy to spot.
And this Colorado view never gets old.
I hope you’re up for an adventurous autumn with me as I explore vegan Taos and learn more about air frying, teaching…and myself!

Exciting news! Congrats on the books and the class!! I’ve not yet tried anything air-fried, but I’m really eager to sample something. I want to try some stuff before I shell out and buy my own, but I don’t know anyone who has one!
Also, those bagels sound delicious!! And all that avocado on the lentil burger!
