In my last post, I shared all the yummy warm meals we made during several snowy days here in Colorado Springs. I promised to share the recipe for my Apple Millet & Oat Porridge.
Here it is!
Apple Millet & Oat Porridge
Ingredients (Serves 8)
- 3/4 cup dry millet
- 1/2 cup rolled oats (not instant)
- 2 apples, diced
- 3 cups water
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions
Toast the millet by placing millet in a pre-heated uncovered pressure cooker on medium heat (or the simmer/saute/brown function of an electric device). Stir frequently until golden brown and fragrant.
Add remaining ingredients. Combine well. Cook on high pressure 10 minutes. Use a natural release (manually release after 15 minutes).
Serve as is or with a splash of nut milk or yogurt (try my homemade yogurt)

Yum!
This is so good. I used about a TBSP of fresh grated ginger, honey crisp apples, and added a splash of vanilla. Even my picky kids ate it!
