The Happy Herbivore: A cookbook review and GIVEAWAY!

A few weeks ago I got an email from the publisher of The Happy Herbivore cookbook offering a review copy. I explained that I had already ordered the cookbook but would love a copy to give to one of my lucky readers! Before I get to the giveaway, let me share my thoughts and a few of the recipes I’ve made from this new cookbook.

Lindsay S. Nixon offers no-fat and low-fat recipes with healthy ingredients that you probably already have on hand. The recipes are accessible, the ingredients are wholesome and the dishes are so tasty. Let’s eat!

Breakfast: Monkey Pancakes

(Okay, they aren’t called Monkey Pancakes in the cookbook but isn’t he cute?! I gave him bananas with his maple syrup.)

These are actually Brown Rice Pancakes (p. 29).  I used spelt flour instead of whole wheat pastry flour and I used homemade almond milk.  These pancakes are dense, but light, and are nutty, just as Lindsay promises in the recipe.  I ate two monkeys.

Lunch:  “Tuna Salad” (p. 113)

I had to try this recipe because so many “mock tuna” recipes are made with tofu.  Lindsay uses the chickpea.  I love the ingredients! I did use Vegenaise instead of a homemade mayo because, unlike The Happy Herbivore, I am NOT a fat-free or low-fat vegan.  This salad is so flavorful! It will absolutely be a staple in my house. Dinner: Easy Macaroni and Cheese (p. 159)

Let’s get the obvious out of the way right now: YUMMY! This was so, so good!  I made this with spelt shells and, wow, what a hearty meal.  The Cheddar Cheesy Sauce (p. 264) is really good.

I’m going to confess that at first bite I was nervous.  I’m not a big fan of nutritional yeast.  It tasted pretty intense.  But I had another bowl of it a few days later, reheated, and I realized that the taste has grown on me.  So much so that I poured some of the sauce over my homemade seitan. Oh, yes, you read that correctly!  I made my own seitan and now I think I’m a culinary rock star.  (The easy Log Seitan recipe comes from Hungry Hungry Hippie.)

We’ve now enjoyed breakfast, lunch and dinner, courtesy of The Happy Herbivore.  It’s time for dessert…

  5. I just made the Spinach Artichoke Dip for Super Bowl Sunday, and it was a pretty big hit. My 12-year old ate it which is always a plus! (I did add some spice tweaks and a dollop of vegan cream cheese/parm cheese since I, too, and not a fat-free vegan.) I am so excited for easy recipes that you can put on the table in a relatively short amount of time.

  8. Ooh what a fabulous giveaway. I’ve tried a few recipes from Lindsay’s site–the baked corndogs are particularly awesome–and would love to have a go at some of her cookbook recipes, too (especially that mac n’ cheese – YUM).

  9. I tried the chocolate zucchini muffins. My hubby loves them! I struggled with ‘mashing’ the banana (yes, it’s embarassing, but true) and I got some great tips on how to do it for next time. The flavor is awesome though. If anything a touch too chocolate for me!

  12. Hi I just stumbled upon your blog and I love it! I’ve been vegetarian for quite a few years and I’m looking to make the transition to veganism. I’d love to make the cinnamon rolls, I think it’s imperative that even vegans have delicous desserts! In otherwords if I can’t have dessert I will fail! hahaha

  19. I love the mock tuna salad and just had my 9 year old try it and he said he liked it. We are hoping for healthier food choices in our family. I want to try out the “monkey” pancakes–my son and husband love to eat pancakes on the weekends and I will try it out very soon.

  21. This is so timely! I just tried the Cinnamon rolls and the Red Lentil Curry soup! Truth be told, I failed on the Red Lentil Curry soup – I saw the last garam masala optional line, but I failed to notice that it was required earlier during the recipe. The Cinnamon were SO FUN to make though! I haven’t kneaded dough in a while, and luckily I had a rolling pin on hand 🙂

  27. I’ve been promoting the book on my wall on Facebook – so far two friends have purchased the book! I still haven’t made it over to amazon to order. I understand that the wait is now 3-5 weeks! I can’t wait that long. I want to try every single one of the recipes. My family is slowly moving to a non meat diet. I’m at the tipping point and need just a little push over. This book will do it! LOL.
