In the first girlfriend weekend recap installment, A vegan in San Diego. Part 1: Dining out it’s clear that we enjoyed some great meals out and about. We also enjoyed some great meals in. But before I get to that, it’s important you know that we actually did get some exercise, too!
Friday morning off we go
(Lisa and Susan) for a 7 mile walk/hike to Torrey Pines, where I’m sporting my No Meat Athlete tech shirt!
Tuesday morning
(JL and Lisa) we went for a 3-mile trail run.
And Sunday
we ran 6 miles on horse trails.
So now that we’ve proven we worked out to earn our big meals, here’s the food!
Thursday afternoon we visited Chino Farms in Rancho Santa Fe. What gorgeous produce!
As you can see, we had beautiful choices. From there we were off to Jimbo’s for some vegan staples (Sweet and Sara vegan marshmallows are staples, right?)
Thursday Dinner
From the grill: peppers, onion and romaine. From Jimbo’s: tofu salad
Saturday dinner
Black & refried bean burgers with sunflower seeds, ready for the grill
The peaches are ready for the grill
A quick break from the grill to watch the stunning sun set over the ocean from the deck off of Lisa’s bedroom

And Susan and I went with a collard green bun
Top left to right: Veggie burger on collard greens, garlic-saffron quinoa, kale salad (thanks, Whole Foods!) and peaches. Mmm Mmm.
Sunday brunch
Lisa made a vegetarian brunch for she and Vince
Left-over veggie burger scrambled into eggs with a spelt English muffin.
I made a vegan brunch for Susan and I
A tofu-spinach scramble, spelt English muffin, left-over kale salad and a fruit salad.
What a wonderful weekend with my two BFF’s. Shopping, running, communal dining, and talking, talking, talking.
Counting down the days until the next gal’s weekend!
