Kathy Hester’s latest culinary creation is The Easy Vegan Cookbook and I’m thrilled to have it in my growing cookbook collection. My long-time readers know that I’m all about quick and simple meals and Kathy delivers creative recipes that are fast to the table in this new book.

ASIAN CORN CABBAGE SOUP
- gluten-free option** • oil-free option* • soy-free option**
This soup isn’t the prettiest, but the taste is bold and delicious. This recipe is my favorite way to use up the extra cabbage from my CSA.
SERVES 4
½ small onion, minced
1 tablespoon (15 ml) olive oil (*or sauté in water)
2 cloves garlic, minced
1½ cups (105 g) minced mushrooms
Pinch of salt
2 to 3 teaspoons (10-15 g) minced ginger
4 cups (356 g) chopped cabbage
2 cups (282 g) corn kernels (frozen or fresh)
4 cups (946 ml) water
1 tablespoon (5 g) nutritional yeast
2 teaspoons (10 ml) vegetable bouillon
1 teaspoon sesame oil
½ to 1 teaspoon sriracha sauce
1 teaspoon light soy sauce (**or use coconut aminos)
STOVE-TOP METHOD
Sauté the onion in oil (*or water) until it’s translucent, then add the garlic and cook 1 more minute. Add mushrooms and a pinch of salt. Sauté until the mushrooms have cooked down and released their liquid, about 10 minutes.
Add everything except sesame, sriracha and soy sauce (**or coconut aminos) to the pot and cook until the cabbage is tender, about 15 minutes.
Before serving, add sesame, sriracha and soy sauce (**or coconut aminos). Adjust seasonings if needed.
SLOW COOKER METHOD
To prep the night before, sauté the onion in oil (*or water) until it’s translucent, then add the garlic and cook one more minute. Add mushrooms and a pinch of salt. Sauté until the mushrooms have cooked down and released their liquid. Store the cooked mixture with cut cabbage and corn in the refrigerator overnight.
In the morning, add everything except sesame, sriracha and soy sauce (**or coconut aminos) to your 4-quart (4-L) slow cooker. Cook 7 to 9 hours on low.
Before serving, add sesame, sriracha and soy sauce (**or coconut aminos). Adjust seasonings if needed.
Per serving with oil: Calories 156.8, protein 5.5 g, total fat 5.8 g, carbohydrates 22.4 g, sodium 41.8 mg, fiber 4.9 g
TIP: Cheater Slow Cooker Shortcut: Skip the onion sauté and use ½ teaspoon of onion powder instead. Then add the raw mushrooms into the slow cooker for a throw-it-all-in-and-go meal!

My easiest vegan meal is to get the fantasic food mix of vegetarian chili, and mix a can of black beans rinsed, a can of diced oregano chopped up tomatoes/chilis-drained, and a package of frozen sweet corn, cut up a onion, and follow the instructions on the box (kinda like a hamburger helper version of vegan chili!). Easy peasey, lots of TVP in the mix, and YUMMY! Gaileee
What’s your favorite easy vegan meal?
Mine is soup of any kind – throw it all in a pot and there you go!
My favorite easy vegan meal is a pasta dish with veggies. Or a potato with some beans and veggies on top.
My easy meal is sauteed tofu with soy sauce and nutritional yeast, a baked potato (cooked in the microwave) and some side veggie. Easy and delicious.
My favorite easy vegan meal is roasted potatoes, with tofu, mix with some homemade vegan pesto. So yummy!
My favorite vegan meal is veggie stir-fry: Maple glazed tofu, garlic broccoli, cauliflower, green beans, carrots on top of brown rice!
I like anything in a bowl. Veggies, rice, sauce, greens.
Rice, beans, veggies and salsa for summer. Soup for the fall and winter.
My fav easy vegan meal is peanut noodles with whatever veg I have on hand!!
Stir-fry has to top the list (also known as “clean out the veggie drawer time”!
My favorite is putting beans (usually black) in a tortilla along with chopped up tomatoes, avocado and rice if it’s on hand.

My favorite easy vegan meal is more of a formula: a grain, a green, and a bean. Always delicious and wholesome!
Mine would be either my veg posole soup with a twist of lemon or my pho soup with homemade mushroom broth and spiralized zucchini for some extra crunch.
My favorite is no weird stuff potato salad with a veggie dog!
A fast and easy vegan meal that I like to resort to is Chipotle Mac & Cheez with broccolini.

I like rice/potatoes with frozen veggies, marinara sauce and tofu!
Love stir fry. You can use almost any veggie that’s in season so it’s also cheap, and you make mix the sauce up by using teriyaki, ginger-carrot, or even just a little bit of sesame oil.
My favourite vegan meal i millet cooked with pumpkin and tomatoes, spiced with thyme.
Cookeed rice with any available veggies. Easiest thing I know.
My fav easy vegan meal is a potato topped with black beans, salsa, cilantro, green onions, and hot sauce. I also love BBQ soy curls. Would love to own this book!
I have a few easy favorite easy meals – breakfast – oatmeal; lunch – sandwiches (any type of filling); dinner – pasta with marinara.
One pot pasta meals are my favorite easy supper.
My easiest vegan meal (if you can call it that?) is a fresh roll with Veganaise and fresh tomato slices on top! ^_^

Beans and salsa in a wrap
Soft tacos or burritos (depending on what kind of tortillas I have on hand). Tortillas, beans or hummus, a few halved cherry tomatoes, slices of avocado, some salsa. I just warm up the beans/hummus and the tortillas and fill ’em up.

I love making soups and stews for easy vegan meals. I wish my family loved them as much as I do though!
Favorite easy vegan meal, baked potato, topped with leftovers – couple handfuls of steamed greens (greens cook down, so very generous handfuls please), black beans, salsa or hummus, & a sprinkle of homemade vegan Parma (walnuts, nutritional yeast & miso). Quick, easy, filling, nutritious…
My like making a quick, simple taco salad by layering warmed pinto or black beans (but I love the creaminess of the pinto beans best), brown jasmine rice and frozen corn, then chopped mixed lettuce and pico de gallo. DELICIOUS!

My favorite vegan meal is a spin on shakshouka that I make with red or pinto beans and lentils instead of eggs. It’s a huge hit with friends and family.
