Sweet Potato Steel Cut Oats

More breakfast yummies from My Pantry Project coming your way! Yesterday I shared a simple way to use quick-cooking rolled oats. Today I’m sharing another quick oats recipe – this time with longer cooking steel cut oats that are ready in just a few minutes, thanks to the pressure cooker. Enjoy!

Sweet Potato Steel Cut Oats

Ingredients (Serves 4)

  • 1 cup steel cut oats
  • 1/2 cup soft silken tofu (undrained)
  • 1/2 cup canned sweet potato puree (or cooked mashed potatoes)
  • 2 cups water
  • 1/4 cup pumpkin seeds
  • 2 tablespoons maple syrup
  • Pinch of sea salt

Instructions

Combine all ingredients in the pressure cooker. Cover, bring to pressure and cook at pressure for 5 minutes. Allow for a natural release.

NOTE: If you prefer to not see the chunks of tofu, whisk them in the water (or blend) before adding to the pressure cooker.
