Cucumber and Apple Sandwich
I had an idea. I toasted two pieces of Rudi’s Organic Bakery Rocky Mountain Sourdough Bread and thinly sliced one-quarter of a cucumber and part of a honey crisp apple. I spread some vegan mayonnaise on each slice of toast, layered the vegetable and fruit, added a dash of iodized sea salt and some fresh ground pepper. Then I ate it.
