Plant-Based Culinary Wellness & Nutrition Experiences

As a certified health and nutrition coach and the author of eight vegan cookbooks, I bring plant-powered energy to wellness programming through fun, educational, and delicious culinary events. Whether in-person or virtual, my wellness sessions are designed to inspire confidence in the kitchen and help participants build lifelong healthy habits.

Signature programming includes:

Team-Building Cooking Classes

Hands-on culinary classes for 12–15 people (in person) or 100+ virtually.
Together, your team will prepare a nourishing, plant-based meal — with guidance, encouragement, and plenty of flavor.

  • Two-hour class

  • Recipes provided (and ingredients, if in person)

Lunch & Learn: Healthy Cooking Demo

A one-hour cooking demonstration focused on accessible, everyday wellness meals.

My background and experience

A national board-certified health and wellness coach (NBC-HWC), I hold a Master of Science degree in college student personnel administration. With nearly 30 years of experience in higher education and the nonprofit sector, I have served as executive director for three nonprofit organizations: a rape crisis center in Chicago, a literary arts organization in New York, and an international foundation to end violence against women and girls. As a coach leader in healthcare tech, I have developed high-performing coaching teams and I develop coaches as adjunct faculty for Advanced Wellness Coaching at Rocky Mountain University for Health Professionals. I am an adjunct wellness faculty member at the Center for Creative Leadership

In addition to being a national board-certified health and wellness coach, I am a certified cognitive and memory coach, diabetes prevention coach, master vegan lifestyle coach & educator, yoga teacher, and mindfulness instructor.

I am the author of The Complete Plant-Based Diet, Vegan Baking for Beginners, Fast & Easy VeganVegan Meal PrepThe Vegan Air Fryer, and Vegan Pressure Cooking. I am co-author of The Main Street Vegan Academy Cookbook and Vegan for Her. I am the former vegan dining critic for the Colorado Springs Gazette and the Colorado Springs Indy.

I studied at the Natural Gourmet Institute and Organic Avenue and completed the Intensive Study Program at The Christina Pirello School of Natural Cooking and Integrative Health Studies. I am certified by - and on the faculty of - the Main Street Vegan Academy and completed the Food for Life instructor (Physicians Committee for Responsible Medicine- PCRM) certification training.
