Scrambled Tofu & Black Bean Guacamole: A Vegan MoFo breakfast
Easy as can be. Scramble (pressed) tofu with onion, tomato, and cayenne pepper on medium-high heat. Add spinach and a few splashes of Bragg’s Liquid Aminos, cover and simmer for one minute. Add a teaspoon of flax seed oil, plate and top with a dollop of Guaca-moldy (black bean guacamole). A great way to start the vegan day!
