Seitan Tacos

Ah, back to regular life. I sure had fun reading all of those vegan cookbooks, cooking recipes and then writing about them.  But it’s kind of nice to get back to what I know.  Plain old eating. I thawed out some of my leftover Candle 79 seitan the other day and last night I made tacos. I froze half of the seitan as cutlets and half crumbled.  I sautéed the thawed crumbled seitan in vegetable broth, taco seasoning and red onion and served it on a tortilla with guacamole, Daiya Pepperjack, salsa and lettuce.
