PPK’s Red Lentil Thai Chili + Add Your Vegan Voice

I made my first recipe from Post Punk Kitchen this weekend! When I read about this Red Lentil Thai Chili I knew I had to make it. My modifications:  I used 1 cup french lentils and 1 cup of red lentils (omitting the kidney beans), half a red pepper and half a yellow pepper, only 1 T chili powder, carrots instead of sweet potatoes and parsley instead of cilantro.
