Hiiiiiii! It’s been a long first full work week of the year. How about for you?

Last night I got home after spending eight hours on my feet in a commercial kitchen. You’d think I would want to order in, right? Funny thing is, I was about to heat up a quick bowl of pinto beans and rice – both cooked in bulk over the weekend – and serve it over a salad. But I was hankering for a different texture after eating them up for a few days. So I tossed them in the food processor, added some stuff, formed the single servings into 4 sliders and air fried ’em. And then served them over a huge salad with a little dollop of vegan mayo mixed with Frank’s Hot Sauce.

And they were good.

Here’s the (embarrassingly) easy recipe:

Pinto Bean and Rice Sliders

This is a single serving – 1/2 cup rice and 1/2 cup pinto beans – but you can easily double up this recipe. No air fryer? No problem! Bake them at 425°F for15 to 20 minutes or add a little oil to a skillet and pan fry them! 

  • 1/2 cup cooked pinto beans (unseasoned)
  • 1/2 cup cooked white rice (seasoned with dill, coriander and paprika when I cooked it)
  • 1/4 cup diced onion
  • 1/4 cup corn flakes (or breadcrumbs)
  • 2 teaspoons nutritional yeast
  • 1 teaspoon taco seasoning
  • Juice of half a small lemon
  1. Add all ingredients to a food processor. Pulse for about 20 seconds. Transfer to a bowl and mix, mashing together (I used my hands).

  2. Preheat air fryer to 400°F for 3 minutes.

  3. Form four sliders.

  4. Spray air fryer basket with olive oil. Place sliders in the basket. Air fry for 10 minutes at 400°F, shaking at five minutes. 

I can’t wait to make these with all kinds of beans and grains!

Hello from way high in the sky! I’m flying home to Colorado after a whirlwind few days in New York to celebrate the publication of my latest book – coauthored with Victoria Moran –  The Main Street Vegan Academy Cookbook.

Monday night Victoria and I had a lovely dinner with a few of the contributors to the book.

And last night we had a lovely book launch party at Jivamuktea Cafe. I was excited when we announced our book was a #1 bestseller in vegetarian diets on Amazon in its first week.

This book has been a dream project for Victoria and me. It’s a book that is vegan – and addresses all the reason someone might consider veganism. It’s a book that doesn’t follow one “dietary” path within plant-based eating but instead includes all of the delicious ways one can eat foods that are animal-free and cruelty-free. It’s a book filled with tips, strategies and “coaching corners’ throughout so that the reader may actually feel like she or he has a kitchen right there in the kitchen. We have simple recipes and complicated ones. We have uber-healthy eats and fantastically delightful treats. It’s the book to turn to when cooking for yourself or for a vegan or plant-based person who eats differently from you. I think you’re going to love it.

I recently created a chili recipe, starring soy curls, for The Soyfoods Council. Yesterday I modified it for the pressure cooker (yep, it works in the Instant Pot, Fagor LUX, and GoWISE and other multicookers!).

So simple, the result is a hearty, creamy spicy bowl of soup. Here’s the recipe:

Vegan White Chili

  • 1/4 cup water
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 3 or 4 roasted green chiles (chopped ( or 2 4-ounce cans chopped green chilies))
  • 1 1/2 to 2 cups dry soy curls
  • 1 1/2 tablespoon ground cumin
  • 1 1/2 tablespoon dried oregano
  • 2 teaspoons cayenne pepper
  • 1 15-ounce can cannellini or great northern beans (or 1 1/2 cups cooked beans)
  • 1 15-ounce can black-eyed peas (or 1 1/2 cups cooked black-eyed peas)
  • 4 cups no-chicken vegetable broth
  • 1/2 cup vegan cream cheese
  • 1 teaspoon salt (to taste)
  1. Heat water in an uncovered pot. Add onion, garlic, green chiles. Sautéed for a few minutes. Add dry soy curls and continue sautéing. Add water, when necessary, to avoid sticking and to hydrate the soy curls. Add spices, beans, and vegetable broth. Cover and cook on low pressure for 3 minutes. Use a quick release.
  2. Uncover, turn to the sauce function, and stir in the vegan cream cheese. Stir frequently until cheese is blended in well.
  3. It’s ready to serve …
  4. … but I used a mutlicooker today and made the chili early in the day. I covered the pot and turned on the warm function and let it warm throughout the day.

Good morning! I woke up so happy this morning knowing that my decision to live vegan means that turkeys like this one at Woodstock Farm Sanctuary are waking up free from harm.

Last night I did some quick food prep for the holiday and decided that I would pop in today with a blog post hoping it might help you create some fun and FAST dishes today!

Dave and I have 20 friends stopping by for Thanksgiving brunch – we’re calling it a “pre-game” so they can have some vegan food and love before going off to other celebrations.

Dave is making vegan sausage sliders (with his delicious homemade biscuits – the base recipe is in The Vegan Air Fryer) to serve propped on glasses of Bloody Marys.

And I’m whipping up “Thanksgiving Lasagna” – basically, you layer every single Thanksgiving main and side in a pan and bake it You get all of your Thanksgiving in one bite!

And that means I was able to cook most of the food last night. I shared the results on Facebook LIVE and you can watch it here:

I prepared:

-Mashed sweet and russet potatoes with kale, onion, and garlic (in 1 cup of chicken-style vegan broth for 10 minutes low pressure, quick release).

-Cranberry relish (fresh cranberries, one granny smith apple, one honey crisp apple, one orange, the zest of one orange, 1/2 teaspoon ground ginger, 1/2 cup chopped pecans, and a pinch of sugar for three minutes on low pressure, quick release).

-Three roasts! One Tofurky ham and two Celebration Roasts (by Field Roast), actually, in one cup of vegetable broth for eight minutes on low pressure, quick release (I squeezed half the ham glaze over the Tofurky and I placed a teaspoon of vegan butter on each celebration roast; I used the other half of the glaze over the ham before storing in the refrigerator). The basic roast technique can be found in the original Vegan Pressure Cooking as well as the expanded edition coming out in January.

Vegan Thanksgiving Dishes by JL Fields

Today all I have to do is make the very quick cooking dressing (store-bought, with vegetable broth!) and then layer everything in a lasagna pan with Tofurky gravy and Violife gouda cheese.

It will look something like this (last  year’s leftovers, which inspired this year’s main!)

Easy!

Side note: I took one of the Celebration Roasts out of the Instant Pot and placed it in the air fryer for 8 minutes at 390°F and the result was a juicy roast with a crispy exterior. I shared the results in this quick video. Try it!
