The Instant Pot was the first multicooker I tested when writing the first edition of Vegan Pressure Cooking because it was just becoming the it-product and I needed to know my recipes worked in it (they do!). I’ve had so much fun working with Instant Pot as an affiliate over the last several years and I have even contributed recipes to their cookbooks and app!

  2. I’ve had an Instant Pot for a couple years and love it especially for rice, soups, and beans. I discovered I could cook an entire bag of potatoes hands-off! I would love to win one for my daughter. 🙂

  5. Mashed potatoes are so easy to make in the instant Pot. Just mashe them right the potato water!

  10. I love my IP, but I have a long list of things I still want to try… cake, vegan yogurt, and using dividers or dishes to create more than one thing at a time are what I am going to tackle in the near future.

I’m definitely excited about bean cookery not taking a Sunday afternoon. I’m super stoked on saute then instant curries. I’m most curious about seeing if I can make my own yoghurt.

  21. jl!!! This giveaway is amazing. I have your AF cookbook (which i love) and the air fryer is one of my most used kitchen appliances. The instant pot looks so fun. The yogurt function is most interesting to me but pressure cooking is the most useful. I would make chickpeas for days because I go through cans like crazy. Id also make soup and pasta. I follow the IP group on facebook but i havent been able to make any recipes yet.

  28. I love cooking in a unit that allows you to put everything together up front….then allow the time to let heat infiltrate the food. It seems healthier….I don’t think there’s any problems cooking hard beans.

  34. Beans. I have read that pressure cooking beans relieves them of more of the interstinal irritants than any other method, even without soaking. Making beans on the spot from dry would be great for cvegan/vegetarian “clean” eating.

  35. I’ve only seen friends use the Instant Pot, but I’m most excited to make vegetable soup in record time! It’s really neat that I’m able to stir fry the vegetables in the pot, then pour in broth and voila! Soup in under 20 minutes!

  39. I’m surprised by a couple things; the first is how well dry beans (legumes) and lentils cook in it without soaking and secondly, that you can make yogurt in it!

  43. I was surprised to learn how you can make more than one dish at a time, by using different cooking dishes/pots in the IP at the same time. I haven’t got up the nerve to try it yet, but it’s on my list.

  47. I bought pressure cooking book when J.L. was in Boston. It has gotten me started on pressure cooking and I am thrilled! I will be eating more beans and grains because of the shorter cooking times and will save a lot of money by buying them in bulk. I am vegan and looking forward to trying many vegan PC recipes in the future!

  49. The 2 things that I was most surprised that the insta pot could make was pop corn and vanilla extract.
