My vegan weekend in Colorado Springs: The End

Hi friends! I’m back in New York and am stunned by the heat and humidity in comparison to Colorado Springs.  My curly hair is back!

Saturday I shared my first few vegan dining experiences in Colorado Springs.  Sunday, in my weekly news/links round-up, I shared some stunning pics from my run though the Garden of the Gods. Today, I’ll share a few of my other meals.

A friend on my blog Facebook page suggested we try Wild Ginger Thai for lunch.

This veggie and cashew stir-fry was supposed to be a pork dish but I requested a tofu substitute.  So tasty!

It was Territory Days so Colorado Avenue in Old Colorado City was hopping when we went to Jake and Telly’s Green  Taverna or dinner with two other couples later that evening. While Greek restaurants can be vegan-friendly, I didn’t find this one to be terribly so.  But I did spy several sides that, combined, would make a lovely meal.

This plate of Gigantes beans, braised carrots and sautéed spinach was flavorful and satisfying. The atmosphere at Jake & Telly’s was lively and fun.

The next day I deemed it “vegan” day – meaning we were going to restaurants that specifically catered to a plant-based diner.  Based on a comment on Saturday’s blog post, we tried Rasta Pasta.  I loved the casual vibe of this place!  We started off with drinks and chips with a spicy salsa.

We devoured this!

I ordered the Spicy Jammin’, a rotini dish made with shrimp but with the note “can be made vegan” meaning I could choose to substitute tofu or veggies. I chose tofu.

Wow, my mouth was on fire – in a good way!  Great food and I cannot wait to go back.

After lunch my husband, a triathlon coach, took me on a tour of the U.S. Olympic Training Center.

Summer Olympics spirit was in the air!

For our last meal, dinner on Sunday night, we went to Poor Richard’s. I loved this place! You order at the counter, they bring you the food, you bus your own table. And they have a vegan menu!

I went with the Salad and a Slice option.

I had spinach, black olive and red onion on a slice with Daiya cheese and a salad with chickpeas.  So good and priced perfectly!

We had a marvelous time in Colorado Springs!
