Vegan Instant Pot & Pressure Cooking Basics (Recipes + Q&A)

The third in our series of online vegan cooking classes, this one is all about pressure cooking and using the Instant Pot to create fast and easy vegan food.

Potato, Apple, and Lentil Soup

Ingredients

  • 1 teaspoon extra-virgin olive oil
  • 1 cup 160 g diced onion
  • 1 cup 130 g chopped carrots
  • 1/2 teaspoon chipotle powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground cinnamon
  • 3 cups 330 g cubed potatoes
  • 2 cups 300 g diced apples
  • 1/2 cup 100 g dried brown lentils
  • 4 cups 940 ml low-sodium vegetable broth
  • 1/2 to 1 teaspoon sea salt
  • Ground black pepper

Instructions

  1. In an uncovered pressure cooker, heat the oil on medium-high. Add the onion and carrots and sauté until the onions are soft, 3 to 4 minutes. Add the seasonings, potatoes, apples, lentils, and broth. Stir to combine.
  2. Cover and bring to pressure. Cook at high pressure for 10 minutes. Allow for a natural release.
  3. Remove the lid, taste and add salt to taste. Serve with freshly ground pepper.

During the class I used yellow split peas in place of the lentils and then pureéd it with an immersion blender to create creamy soup!
