Weekend getaway to Breckenridge

Good morning from Breckenridge! We are dog-sitting for our friend who is running the Leadville Trail race today. Let me be more specific: She is running 100 miles! Right now!

A few hours later we met our new pal. She was sad when our friend left…

…but she sort of digs us now.

We went out for lunch and then stocked up on groceries (don’t you love a getaway that includes a kitchen?). I fired up the laptop to do some writing and enjoyed this view from the living room.

Our dog friend gets up early so on Friday we did, too.

After taking her for a brisk walk,

I made this tofu scramble (Dave made the vegan sausage; and by made I mean sliced the sausage from the package and heated it up).

Tofu Kale Scramble

Saute onion and mushrooms. Add crumbled extra-firm tofu, turmeric, and cumin. After about five minutes add halved cherry tomatoes and kale, cover to wilt the kale for about a minute, uncover and stir in seasoning of choice (we used Herbamere, a  salt/spice blend).

We then headed out for a hike on Spruce Creek Trail in Blue River.

A glorious two-hour hike! 

I spent the rest of the afternoon hanging out with my canine friend and writing. We made this for dinner.

Rigatoni with MM Local Foods front range tomatoes with basil, black beans, mushrooms, chives, spinach, and a splash of balsamic vinegar. Topped with red pepper flakes.

And now, after walking our little buddy, we’re driving to Leadville to cheer on our friend at about mile 40 of her 100 running race!
