What a week! Busy, busy, busy! I had a few meetings in Manhattan and I made a point to find some delicious vegan food to keep me going.

I had this tofu scramble at ‘sNice for breakfast.

And this crispy vegan burger from Loving Hut for lunch.

While I was working way too many hours and eating my way through NYC there were other vegan things happening that I found interesting…

…it’s good for a chef to think outside the box, and there are more people who go vegetarian but still eat the butter and cheese, and you need to be prepared for them. I’ll experiment with even more vegan and vegetarian items and put some more appetizers and other options on the menu so when people look in the menu they know it’s available.

    You’re just a traveling maniac! Thank you for the links. Now I don’t mean to sound daft or insensitive, but I’m always kind of confused that people make SUCH a big deal about finding ways to eat more plants or a plant-based diet. While it’s always been a priority for me and I’ve never had an attachment to meat, I really don’t think it’s that complicated. It’s new habits and new priorities, which I guess is hard for some people to digest (no pun intended.)
    Anyway, rant over ;) It just seems there are a million stories about it when it does just come down to eating real food–mostly plants–and being mindful. Safe travels to you!

      I love sharing these stories because many people DO think it’s complicated and, for some, it is. I think we all feel empowered when we realize others have shared experiences or struggles. I love highlighting the moments when people “get it” or get excited about it. The news may not be relevant to you and where you are with your diet and ethics but, trust me, more of my readers are looking for just this type of info – which is why I provide it!

      Yep, lots of travel these day. I’ enjoying!

        Oh, I didn’t mean that in a bad way at all! I love that you share these things because I’m constantly learning new things. I think I was coming from a place of people making things entirely too complicated when it comes to making healthy choices. I apologize for the misunderstanding. To each their own with their food, but I guess I hear all too often how it’s something unattainable for people and they’re looking for the next easy fast solution. These articles help those willing to make the effort. I guess I was just talking about those who instead make excuses (had an incident this morning, so I think I’m just being a bit bitter.)

        With all the information out there, there’s no excuse for those truly looking for change. Sorry for the confusion!

    Think the key to maintaing/losing weight while doing a vegan diet is to focus on unprocessed plant foods………That might make the results more consistent, if that is what people are looking for! To me, the most important part is to skip the animals. But if people are looking to slim down or do it for health, then the unprocessed part is a little bit more important.
