VeganMoFo 6: Thursday = Dessert (Cinnamon Raisin Banana Bread with Banana Butter)

Believe it or not, I’m not much of a dessert person. I realize my vegan marshmallow sandwich may have you thinking otherwise, but, really, I don’t have a huge sweet tooth.  I do, however, enjoy a little post-dinner nosh. This week I opted for a sweet bread (see? truly on a bread making kick!) and a fruity “butter” (ala the Peachy Butter I made a few weeks ago).

Ingredients

For the bread

  • 3/4 cup So Delicious coconut milk
  • 2 tablespoons water
  • 1 tablespoon earth balance, softened
  • 1 cup bread flour
  • 3/4 cup stone ground wheat flour
  • 1/4 cup vital wheat gluten
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 2 teaspoons regular active dry yeast
  • 1/8 cup dry (dehydrated) bananas (ground in coffee mill)
  • 1/3 cup jumbo raisins

For the banana butter

  • 2 tablespoons Earth Balance
  • 1 tablespoon So Delicious coconut milk
  • 1 ripe banana, mashed
  • 2 tablespoons jumbo raisins
  • Dash of cinnamon

Instructions

For the bread

  • Spray bread machine pan with olive oil.
  • Add all ingredients, except for the raisins, in order listed.
  • Select the sweet bread option.
  • About 32 minutes into baking–some machines beep–add the raisins.
  • Let cool for 30 minutes before slicing

For the “butter”

  • Heat Earth Balance vegan margarine and coconut milk in a small saucepan.
  • Mash the banana and add raisins, mashing together.
  • Add banana and raisin mixture to the sauce pan and simmer for a few minutes.
  • Serve over warm slices of bread.

      1. That sounds heavenly. I love how flexible an idea it is, I can see it creeping into pancakes/crepe fillings, spread on top of muffins…. oooh, very hungry now!

    1. Indeed, I had it for breakfast yesterday! I love that enjoy something sweet that can be a meal or a treat…but who’s to say meals aren’t treats, right? 😉

  1. Your bread-making kick is making me want to get a bread machine…not that I need another appliance in the kitchen. I do, however, love bananas and cinnamon!
