VeganMoFo 5: Wednesday = Dinner (Black beans, greens and grains)

I’m a sucker for the basic beans, greens and grains vegan meal.

For this dish I opted to use coconut oil with the black beans because I thought it would really complement the parsnip — and it did! It’s a sweet and spicy flavor that just works.  The brown rice kasha is a perfect side to something so flavorful. Nothing but salt was required as buckwheat is incredibly flavorful. I like to eat something raw with most meals; I opted for raw kale with fresh lemon juice.  The beans, greens and grains combo could not be beat!

 Ingredients

For the beans

  • Black beans, soaked in baking soda for 2 hours and rinsed well
  • Coconut oil
  • Garlic, minced
  • Banana pepper, diced
  • Jalapeno, diced
  • Yellow onion, diced
  • Parsnip, chopped
  • Carrot, chopped
  • Filtered water
  • Bay leaf
  • Sriracha
  • Sea salt, to taste
  • Ground black pepper, to taste
  • Fresh parsley, chopped

For the brown rice kasha

  • One cup brown rice
  • One cup toasted buckwheat groats
  • About 3 cups of filtered water
  • Iodized sea salt (to taste)

Instructions

For the beans

  • Soak black beans in baking soda for 1 – 2 hours, rinse well and drain.
  • Heat coconut oil in the pressure cooker and add garlic, peppers, onion and veggies and saute for a few minutes.
  • Add the black beans and bay leaf.
  • Add enough water to cover the beans.
  • Lock the pressure cooker lid into place and bring to high pressure.
  • Cook at pressure for 15 minutes.
  • Remove pressure cooker from the burner and release pressure naturally.
  • Remove the lid by opening away from you.
  • Bring the beans to a simmer, adding Sriracha and sea salt to taste.
  • Stir in fresh parsley.

For the brown rice kasha

  • Add rice, buckwheat groats, water and salt to the rice cooker.
  • Set rice cooker to the brown rice setting.
  • Begin to check on the mix at approximately 25 minutes.

    I think a pressure cooker/rice cooker would allow me to enjoy my beans, greens, and grains even more!

      Honestly, that’s why I eat them so much. So easy to make, so much flavorful than pre-made or canned stuff. I have both working overtime on weekends!

    Hey JL! I definitely consider myself a beans/greens/grains vegan more often than not. I love the warmth, textures, density, and nutritional value gained from such bowls — not to mention great taste! I always feel full after a great combo bowl.

    Love the beans, greens, and grains! Definitely that kind of vegan. I’ve been doing a variation on it lately as my desperation speedy “i’m starving and can’t think” meal: One apple and sage field roast chopped into pieces steamed in a pan with tons of kale, a little water, salt, pepper, and garlic powder.

    OMG, that is hilarious! I love it!

    Without the peppers and Sriracha you’ll experience a light, sweet-ish dish. Maybe use cinnamon!

    Loving October Mofo and love this beans, greens and grains!. We pretty much eat some or the other combination of beans, greens and grains atleast one meal, because its an indian meal.. either whole grain flat breads with beans/lentils and  stir fried or salad greens or rice and beans and stirfried veggies!

    It looks yummy and filling! 
    My favorite kind of beans are kidneybeans. I prefer them with some carrots in a currysauce, together with some wild rice.
