This week in vegan food and community events, work, and more!

Saturday. Restful sigh. As I plan my day (a little Buddhist action in the morning, a town hall meeting with my local state representative, and lots of writing) I thought I would share some of my eats and activities for the week.

Monday I started with some delicious drinks.

Purple Smoothie and tricolor juice on JL goes Vegan

Smoothie: almond milk, uncooked rolled oats, frozen cherries, frozen banana, hemp seeds and coconut water.
Juice: green apples, carrots, carrot tops, bok choy, an orange and ginger root.

I donned a new t-shirt (via Vegan Cuts).

And attended my first (PPART) Pikes Peak Animal Rights Team meeting.  I got an assignment and has something to do with a goat. More on that in another post!

Tuesday I started with another smoothie.

Then I went to work. Wait, went to work? Don’t I work from home?  Yes and no. I recently began to face some of the challenges of working from home and being a writer, coach, non-profit and education consultant, and recipe developer. It can get a little challenging to focus in my home office. So I became a member of Epicentral Coworking

an awesome space where I work in a big room with other freelancers and small business owners. Or I duck into the “quiet room” when it’s writing time. Or I station myself in the “phone booth” for conference calls with clients.  Epicentral has ample conference rooms space and it’s where I’ll be holding my March vegan lifestyle class. Speaking of that, the Colorado Springs Independent listed my class in Friday Food Finds yesterday: Vegans, veggies and brews How cool is that?

The coworking space is conveniently located downtown, doors down from several vegan friendly restaurants, including Poor Richard’s, where I grabbed this vegan bowl to go for lunch.

Wednesday night we went to Whole Foods for a cooking demo with my friend Alan Roettinger, author of Speed Vegan. He is super-engaging and makes delicious food.

Thursday started with more smoothies.

 Almond milk, swiss chard, bok choy, ground flaxseed, frozen clementine, frozen banana, frozen mango, ground turmeric, and coconut water.

I worked in my home office for a few hours before going to a noon yoga class. I brought Julie, the owner of The Bija Studio, back to my place for lunch.

Friday I worked from my home office, with my assistant, Ernie, at my side.

My husband and I ended our day at Trinity Brewing Company, where I had my usual seitan gyros and tried their new Cherry Saison.

Thus ends another fun, delicious, productive, vegan week.
