Shredded Apple and Veggie Salad with Goji Berry Dressing

Yesterday I was craving raw food all day.  When I got home I opened up the fridge to discover that it was definitely time to grocery shop.  Though the shelves were bare, I managed to come up with a fast, easy and crunchy dinner.

  1. This sounds great! I love shredded apples as a “slaw” type salad, and your dressing sounds amazing for it! Thanks for sharing, I’ll have to try it out soon! 🙂

  2. Looks good.  I usually don’t eat kale stems (I give them to my dog) but I will try this.  (You did mean to shred the “stems”, right?)

    1. Yep, I just shred them with the carrots and celery. I liked the color and crunch.  I usually juice my kale stems, though right now I have the rest in my pressure cooker with the week’s veggie scraps. Stock time!

  3. I just discovered how sweet my kale stems are.  I will definitely try this salad- looks amazing.

  5. I’ve never made a goji dressing, but I think I’m overdue!!! This looks awesome in every way.
