  1. JL, you can get even better results with your vegetable stock if you caramelize the vegetables for the stock. Add 1/4 tsp. of baking soda and perhaps 1/2 tsp. of coarse kosher salt to the vegetables in the pressure cooker. This makes the pH of everything more alkaline, which facilitates the Maillard reaction, and helps caramelize the veggies. Also, try adding a star anise to the vegetable broth – it gives a great taste and aroma, and adds a depth of body and flavor that’s lovely.

  2. JL, Thanks for this series, I am enjoying your blog/vlog! Can you share what size pressure cooker you cooked your potatoes in? I purchased an 8 quart Fagor based on Cooks Illustrated’s high ratings, they recommended the larger size to accommodate soup stock. But I usually just cook for 1 or 2, and it’s way too big, so I avoid using it! The one you used in your video looks like the perfect size for smaller dishes.

    1. Thanks for the feedback, @ec34e0b9ca753c7c5f651a629f563f67:disqus! I’m having fun with the series! I used a 4-quart Fagor pressure cooker for the potatoes. This particular one is shaped much like a skillet and is great for veggies, oatmeal and other “small” meals, just as you mentioned!
