More vegan vacation food photos

Saturday I gave you a glimpse into my vegan eating while vacationing in Florida and Monday I shared a Chicken-Less Salad recipe I whipped up with Beyond Meat for a pool-side picnic.

I’m now home and reality hit hard. My last day in Florida was on the beach. I left the Sunshine state Wednesday with kisses of sunshine on my nose and shoulders in the form of freckles and pink skin. Today I woke up to several inches of snow and winter advisories. April in Colorado. Sigh. I’m going to try to crawl back into the warmth through the final few vegan vacation food photos I snapped while pool- and beach-side.

Monday my aunt decided to make a veganized version of the Cheesecake Factory avocado egg rolls. She used tortillas and they were fantastic!

She followed that up with a simple vegan cobbler served with So Delicious ice cream.

My vegetarian aunt is very vegan-friendly!

We went to Chili’s for dinner and I had the chicken margarita salad, hold the chicken, cheese and sour cream. It was good!

The next day we spent the day at Clearwater Beach

where I found a Boca burger at Palm Pavillion.

After many, many sun-soaked hours on the beach we ended our vacation at Jimmy’s Fish House and Iguana Bar. I selected Jimmy’s because they had edamame on the menu.

The Bloody Mary (hold the shrimp, hold the Worcestershire sauce) were also pretty delightful.

Which I’m trying desperately to remember because though my pink nose and the freckles on my shoulders linger, this was my view in Colorado Springs the morning I write this post.
