Meatless Monday Collard Greens

While writing Vegan for Her, my co-author Ginny Messina implored me to add more collard greens to my recipes – or to at least remind readers that when making any of my leafy green recipes using kale, swiss chard or spinach you can always substitute collard greens.

Why? They are a great source of calcium and excellent for bone health!

  1. I had a feeling these thick leaves were better for me than I realized! I mostly like to chop them up small and stir them into pasta sauce, potato bowls with hummus, rice or quinoa and soups. Kids think it’s just herbs 🙂
