It’s been a long time since I’ve had a green smoothie. Dare I say I may have burnt myself out on them?
I tend to get into a
rut routine with breakfast: smoothies every single day, miso soup every single day, or porridge every single day. My daily work schedule has changed recently and I’m trying adjust some of my eating patterns accordingly. Enter the long-lost green smoothie.
What’s in it?
- Almond milk (about a cup)
- Spinach (a handful)
- Chia seeds (I poured them in, maybe 2 tablespoons?)
- Banana (a whole one)
- Apple (a whole one, cored)
- Pineapple (I had a few pieces leftover from a fruit salad)
- Tons of ice
I tossed all of this into the Vita-Mix and minutes later I was reminded why I love green smoothies. Flavorful and filling!
This made enough for two smoothies, so I stored the rest in a mason jar in the refrigerator. For breakfast today. Not that I’m going to get into a rut or anything.
I’m off to Manhattan for a day of meetings with all kinds of compassionate folks! I’ll see the women behind Our Hen House later this morning, a friend from PETA mid-day, and the force behind The Seed: A Vegan Experience in the afternoon. Have a wonderful Friday, friends!
