Green Ice Cream {#whatveganseat for breakfast}

My morning meals have been mostly smoothies for the last couple of weeks – most likely because I have stepped up my fitness quite a bit as I am training for a summer duathlon (run – bike – run).  I love a tall, liquid breakfast after a workout.  Yesterday was a rest day from exercise; I wanted all the powerful nutrition of a smoothie but was most definitely craving a new texture.

I grabbed my usual smoothie ingredients (frozen fruit/ice, something green, plant-based milk, flax or chia seeds and a date or other natural sweetener).  I simply altered the amounts of each ingredient and suddenly I was eating a beautiful bowl of green ice cream.  Same great ingredients – completely different mouthfeel experience.

Green Ice Cream

Ingredients (Serves 2)

  • Spinach (a generous handful)
  • 1 Medjool date, pitted
  • 3 large frozen strawberries
  • 1 frozen banana
  • 1 tablespoon ground flax seeds
  • 1/4 cup soy milk (or preferred plant-based milk)
  • Ice cubes (just a few)

Instructions

  1. Add all ingredients, in order listed, to a high-speed blender.
  2. Blend for just a few minutes, to desired ice cream consistency.
  3. Serve and enjoy!

This ice cream is smooth, filling and packed with nutritious flavor.

    Great minds… my breakfast looked exactly like that today, except I used butternut squash to get mine creamy.  3 cheers for breakfast-desserts!

    I have never tried a green smoothie. I’ll have to give it a try one day. A dualathon would be fun. I’m not much of a swimmer but can run and bike. Good luck with your race this summer.

       I love triathlon but I just can’t make time in my schedule this year for three sports.  Running and cycling is easy because they both start from my house – don’t have to drive somewhere!

    Best of luck with the training! I find biking is ridiculously tough, my legs transform into a strange mix of strained muscles and jelly ahhahah, so I can’t imagine how fun running would be afterwards, you must have amazing endurance JL, kudos to ya!A run/swim/run duathlon would pretty cool though, hope one pops up in my city someday soon.

    Ahh, this recipe is perfection, strawberries + banana + spinach = green trinity of awesome? :D  I adore adding random green stuff to pretty much everything I can get away with (months ago I discovered how awesome my morning raw buckwheat “porridge” tastes with several cup-fulls of greens blended up!), so this is just lovely, no more plain banana soft serve for me then. 
    Off to freeze some bananas, this’ll be a great treat for mum’s day, I’ll sneak in some cacoa/carob powder ’cause she loves the choco!
