Last month Hodgson Mill reached out to me, offering samples of their pasta – in return I was challenged to create a new recipe for their Summer Pastabilities recipe contest on Pinterest. The contest deadline was Monday and, truthfully I found myself in the kitchen Monday morning, scratching my head. As you know, I had spent the prior six days in the Main Street Vegan Academy and I had almost forgotten about the pasta salad recipe contest!
Hodgson Mill sent three types of whole wheat, whole grain pastas to sample: medium shells, bow tie and angel hair. As I pondered my recipe, I kept seeing the color green in my head. But, I didn’t have a whole lot of green in the house because it was grocery shopping day. Thankfully, over the weekend my husband did pick up spinach for my morning smoothies and haricots vert for snacks. Suddenly, inspiration struck!
Do you remember my Creamy Kale Miso Soup? I have taken a good concept and made it better, if I do so say myself! For this pasta salad I made a spinach and tofu cream sauce and tossed it with bowtie pasta. I stirred in chopped haricots vert, red onion, and dill weed. I. Love. It.
